Ingredients
- 1tsp Dijon mustard
- 60ml (¼ cup) white balsamic
- 250g hulled, halved strawberries
- 125ml (1/2 cup) extra virgin olive oil
- 4 slices prosciutto torn into strips
- 200g crumbled blue cheese
- 1 bunch rocket
- 4 slices wood-fired bread either grilled or toasted
Instructions
- Place oil, balsamic and mustard in a bowl. Season with salt and pepper and combine with a whisk.
- Mix the strawberries and rocket together in a large bowl and add prosciutto and blue cheese.
- Tear the bread into chunks and add to salad. Toss gently to combine and drizzle with dressing. Serve immediately and enjoy.
