Our quick and delicious recipe is perfect for the warmer weather.
1tsp Dijon mustard
60ml (¼ cup) white balsamic
250g hulled, halved strawberries
125ml (1/2 cup) extra virgin olive oil
4 slices prosciutto torn into strips
200g crumbled blue cheese
1 bunch rocket
4 slices wood-fired bread either grilled or toasted
- Place oil, balsamic and mustard in a bowl. Season with salt and pepper and combine with a whisk.
- Mix the strawberries and rocket together in a large bowl and add prosciutto and blue cheese. Tear the bread into chunks and add to salad. Toss gently to combine and drizzle with dressing. Serve immediately and enjoy.
