This nutritious and tasty meal is easy and quick to make after a busy day at work.
1 medium diced avocado
60g baby rocket
375g dried spiral pasta
2tbs grated parmesan cheese
2tbs lemon juice
2tsp finely grated lemon zest
¼ cup extra-virgin olive oil
- Following packet directions, cook pasta in boiling salted water until tender. Drain and reserve ¼ cup cooking liquid and return pasta to cooking pan.
- While the pasta is cooking, whisk together the lemon juice, lemon zest and oil, half the Parmesan cheese and season to taste.
- Add this mixture plus the reserved liquid, avocado and rocket to pasta. Toss thoroughly to combine and serve with the remaining Parmesan.
